Let the potatoes dry out for 8-10 days. This will allow them to heal cuts and bruises that may have occurred during the digging up process. It also toughs the skin for storage for the winter.
The rich, black soil of some gardens may cause discoloration on the outside of the skin on some potatoes. Do not be alarmed as this is normal and will not affect the taste or storage life.
After the potatoes are dried out, store them in an area with temperatures between 50 and 60 degrees Fahrenheit.
