Why does my watermelon have a bitter or poor flavor?

Bitter flavor can be caused by a number of factors including: hot and dry weather conditions; overwatering; or poor soil conditions. Melons have shallow roots, make sure the soil is moist but never waterlogged. Test your soil for nutrient deficiencies.
