All carrots contain a compound called terpenoids. When combined with sugar it gives the carrots their taste.
If there is a high amount of terpenoids, the taste is off.
Reason includes harvesting too early or it is too wet or too dry. It is still safe to eat and cooking removes a lot of the off taste. Give the carrots more time if the first one taste soapy.
