How do I harvest potatoes?

Early Harvest: For new potatoes (small, tender potatoes), you can harvest once the plant begins flowering.




Wait until about 2 weeks after the tops turn brown. Carefully dig the potatoes up on a dry day. A spading fork works well. Let the potatoes dry for 2-3 hours. When dry, wipe the dirt off. Do not wash them. Store them in a cool dark place.
